Chocolate Chocolate Chaffle

Equipment

  • Mini DASH or similar waffle iron

Ingredients

Wet Ingredients

  • 2 ounces cream cheese, softened *SEE NOTES
  • 2 tablespoons melted butter
  • ¼ cup heavy whipping cream
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 2 tablespoons almond flour
  • 2 tablespoons granulated non-sugar sweetener of your choice up to 4 tbsp if desired
  • 1 tablespoon cocoa powder
  • 1 tablespoon oat fiber *SEE NOTES
  • 1 teaspoon baking powder
  • ¼ teaspoon psyllium husk powder *SEE NOTES

Add in

  • 2 tablespoons Lily's or Lakanto mini chocolate chips

Instructions

  • Plug your mini waffle iron in to start preheating.
  • Mix all wet ingredients together until well blended.
  • Add dry ingredients to wet ingredients.
  • Mix well.
  • Gently stir in chocolate chips.
  • Let batter sit for 5 minutes before cooking.
  • Pour about 2 tablespoons of batter into waffle iron.
  • Close waffle iron and let cook until waffle stops steaming. This will generally be longer than when cooking conventional waffle batter.
  • Remove from waffle iron and serve with toppings of your choice. I like to top with whipped cream sprinkled with additional mini chocolate chips.

Notes

NOTE: Cream cheese should be at room temperature and soft. Alternatively, you can soften it in a microwave set to a low power setting for about 30 seconds at a time until it softens.
NOTE: Oat fiber IS NOT the same as oat flour. For this recipe to work correctly, and remain low carb, oat fiber is essential. It is an ingredient you will likely need to order online but it is worth it to have it on hand. It is called for in many of the recipes on this site, but always in very small quantities, so one bag will last quite a while.
NOTE: Psyllium husk powder is another ingredient that may be unfamiliar, but is instrumental in achieving a good texture in low carb baking. It is sold as a baking ingredient and also as a fiber supplement. Be aware that some brands can turn purple when mixed your recipe. Probably not the most desirable color for food . . . I generally use the Konsyl brand or NOW brand and neither of them does that.
