Perfect Low Carb Chocolate Mousse
Finding satisfying snacks and desserts while following a low carb or keto diet can be challenging. This low carb chocolate mousse recipe is your answer. It often isn’t possible to purchase something at the grocery store, so making your own ahead of time is often the best solution.
When you are looking for something rich and creamy and chocolatey, this Low Carb Chocolate Mousse recipe is sure to satisfy.
Preparing it only takes a few ingredients and about 10 minutes of your time. Ideally, it sets up in the refrigerator for about an hour before serving, but we have eaten it immediately too.
The recipe as written calls for real vanilla extract, but many other flavors that complement chocolate can be added as well. How about mint, bourbon, caramel, or raspberry anyone?
Satisfying When You Want Decadent!
The taste of this low carb chocolate mousse tells you that this dessert doesn’t fit in with your low carb or keto diet, but with just a bit of planning, it does. The flavor is chocolatey and slightly tart. The texture is super creamy and satisfying. I find it to be a suitable alternative when I want some good old-fashioned chocolate ice cream or chocolate cheesecake.
An added benefit is that a tiny amount goes a long way. Just a bite or two is often enough. Part of eating low carb or keto is just eating until you are satisfied. While this recipe specifies four servings, I usually eat half of a serving at a time. It is so rich and satisfying.
Easy to Make Low Carb Chocolate Mousse
Begin by whipping the 4 ounces of heavy whipping cream in a small mixing bowl or 4 cup glass measuring cup. Use a portable electric mixture and whip until stiff peaks form. You can set this aside for now.
A note about sweeteners: This recipe works best with Swerve Confectioners or Lakanto Monkfruit powdered sweeteners. If you only have granulated sweetener on hand, use a spice grinder or food processor to grind it to a finer powder.
Next, in another small mixing bowl, blend the softened cream cheese, softened butter, vanilla or other flavorings and the sweetener. Mix until all ingredients are smooth. Your cream cheese and butter must be soft to blend well.
Add three tablespoons of heavy whipping cream to the cream cheese mixture. Mix until very smooth. Next, add the cocoa powder and mix until smooth again.
Add the whipped cream to the chocolate mixture. Blend in gently. Blending too hard or for too long will defeat the purpose of beating the cream in the first place.
Let Set Up and Serve
Chill for at least an hour.
Serve when ready.
For a pretty presentation, use a small portion scoop or cookie scoop to create small scoops of mousse. Top with additional whipped cream or raspberry sauce if desired.
